Sunny Sunflower Cake | Chef Alli's Farm Fresh KitchenWe are celebrating Kansas all through the month of January with the BIG Kansas Day on January 29th! And what better way to celebrate Kansas’ birthday than with a fun, festive Sunflower Cake? To make this cake, I used all of my favorite baking tips to turn a regular box cake-mix into something spectacular, and now I’m going to share them with you!

Boring Box Mix Cake into a Bakery-Quality Layer Cake!

  1. Substitute melted unsalted butter for the oil.
  2. Substitute milk for the water.
  3. Add an additional egg….or two.
  4. Place a greased parchment round into the bottom of each of the greased layer pans to ensure your layer cakes will easily pop out of the  pans.
  5. When layer cakes are removed from the oven, immediately cover with foil, sealing the edges well; let cool completely while covered to force all condensation into the layer cakes for additional moisture. (Many thanks to Grandma Lucille for this super-duper cake tip!!) 

Kansas Sunflower Cake
Sunflower Cake made with Peeps and Sunny Seeds! | Chef Alli's Farm Fresh Kitchen

1 cake mix, any flavor and brand you prefer, mixed according to directions above and baked in two 9-inch layer pans, cooled (I used a yellow cake mix)
1 batch chocolate buttercream frosting, recipe below
2 pkgs. Peeps yellow chicks, cut apart into individual chicks
3 oz. pkg Sunflower Foods Sunny Seeds, multi colored (or substitute mini chocolate chips as the center of the sunflower)
Place first layer cake onto a cake pedestal, top-side down; cover with a nice thick layer of buttercream frosting and top with second layer cake. Frost sides and top of cake with remaining buttercream frosting.
While frosting is still moist, place Peeps chicks around the other edge of cake, pressing into the frosting a bit to adhere chicks to edge of cake. Fill in center of top of cake with Sunny Seeds or mini chocolate chips, and cake is complete!

Chocolate Buttercream Frosting

1 1/2 cups unsalted butter, softened slightly
4 cups confectioner’s sugar
3/4 cup Hershey’s cocoa powder
1/4 cup heavy whipping cream
1 Tbs. pure vanilla extract
Pinch of kosher salt
Using an electric mixer, beat butter and confectioner’s sugar until fluffy, approx 3-4 minutes, stopping to scrape the bowl often.
Add cocoa powder, cream, extract and salt and beat an additional minute. Now beat frosting on high for an additional 3-5 minutes until texture is fluffy and shiny in appearance.
