Fancy Food Show: Salisbury Steak Meatballs

MeatballsA few weeks ago I made Salisbury steak on WIBW and, no doubt, that delicious dish smothered in tomato gravy inspired this bite-sized version. But this time I made it for visitors to try at the From the Land of Kansas booth in New York City! Infused with Fine Vines Artisanal Ketchup, this little meatball is sure to kick your next gathering up a notch!

Salisbury Steak Meatballs with Tomato Gravy

1 ½ lbs. lean ground beef
½ cup Panko bread crumbs
2 large eggs
1 cup Fine Vines Sriracha Ketchup, or choose another Fine Vines favorite
3 Tbs. spicy brown mustard
1 Tbs. Worcestershire
1 tsp. seasoning salt
½ tsp. freshly ground black pepper
1 tsp. granulated onion
2-4 Tbs. unsalted butter, for browning meatballs
2 Tbs. butter
1 medium yellow onion, minced
3 Tbs. Fine Vines Sriracha Ketchup
1 Tbs. Worcestershire sauce
1 cup beef broth
1 Tbs. cornstarch
kosher salt and freshly ground black pepper, to taste
In a large mixing bowl, combine ground beef with panko crumbs, eggs , ketchup, mustard, Worcestershire sauce, salt, pepper, and granulated onion. Combine ingredients well, then roll mixture into 20 meatballs, approx. 1 ½” in size.
Melt butter in a large cast iron skillet over medium high heat; when butter is sizzling, add meatballs, working batches, and cook on all sides until meatballs are nicely browned, 3-5 minutes. Remove browned meatballs to a paper towel-lined plate, then repeat with remaining meatballs.
To make gravy, add onions and ketchup to drippings in meatball skillet and cook until onions are softened, approx. 3-4 minutes, stirring often. In a small bowl or measuring cup, combine Worcestershire sauce with beef broth and cornstarch, then add to the onion mixture, whisking until gravy is nicely thickened; season to taste with salt and pepper. Add meatballs to the gravy and simmer until hot throughout; serve on a bed of mashed potatoes, or over cooked, buttered egg noodles.
They were also good over my Chopped Thai Chicken Salad!
