How do you introduce thousands of football fans to some of the incredible foods and ingredients produced right here in Kansas? You bring it to the stadium! That’s what From the Land of Kansas did for their Celebrate Agriculture game day at Bill Snyder Family Stadium. Samples, treat bags, and happy tummies abounded, but the highlight for some fans (and now for you!) was the tailgate competition presented by Manhattan Hy-vee! Because who doesn’t love a good tailgate dish?
“Our goal for the game was to bring awareness to how agriculture is part of every fan’s game day,” said Stacy Mayo, From the Land of Kansas director. “We used [it] as a platform to promote the Kansas farmers, ranchers and agribusinesses we work to support and promote.” And boy, did they ever! “Contestants were challenged to incorporate Kansas ingredients into their tailgate dishes,” said Dr. Fadi Aramouni, Kansas Value Added Food Lab at K-State and contest judge. “We saw the use of Kansas beef, vegetables, milk, and tortillas, and we all enjoyed seeing the creativity of the participants.”
Dallas Miller’s Southwest Kansas Boy Pasta Salad was voted best side dish and was also recognized as the best dish overall. He has been so generous to share his recipe with Chef Alli’s Farm Fresh Kitchen so that all of you can enjoy it, too! A bunch of cilantro and a little kick of jalapeno give this salad a tasty twist that you’ll definitely want to try at your next tailgate.
Southwest Kansas Boy Pasta Salad
1-16oz box Rotini Pasta
¾ Cup Low Fat Sour Cream
¾ Cup Reduced Fat Mayo
¾ Cup Buttermilk
1 Package Ranch Dressing Mix
1 Bunch Fresh Cilantro
2-3 Ears Fresh Sweet Corn, cooked and sliced off the cobb
1 Red Bell Pepper, Diced
1 Orange or Yellow Bell Pepper, Diced
3 Medium Tomatoes, Diced
1 bunch Green Onions, sliced
Boil Pasta in salt water. Do not over-cook pasta; it should be al dente.
In a food processor, add ranch dressing mix, sour cream, mayo, and buttermilk. Pulse until mixed. Rough chop bunch of cilantro and add to food processor. Start by adding 1 jalapeno. Run food processor until cilantro and jalapenos are well mixed and no large pieces remain. Continue to add jalapenos until the desired degree of heat is reached. Toss dressing with pasta, corn, peppers, tomatoes and green onions. You may not need all of the dressing. Refrigerate overnight before serving.
