Ham and Potato Cheese Soup 

I loved it that this soup took only 8 minutes total time in the pressure cooker, and it was also nice to watch my men literally SLURP it down.  After all, no Mom in the land wants to cook something her family turns their nose up at!  We find this soup is especially delicious when served with warm peasant bread, always handy for sopping. 

Ham and Potato Cheese Soup

1-2 Tbs. canola oil
1/2 yellow onion, diced
2 cloves garlic, minced
1/2 tsp. white pepper
½ tsp. dried thyme
4 cups chicken broth
32 oz. bag frozen southern-style hash browns (I’ve used nearly all types of frozen hash browns in this recipe and they all work just fine)
2 cups chopped cooked ham
4 oz. one-third less fat cream cheese, softened
8 oz. block sharp cheddar, shredded

Pressure Cooker Method:
Place oil into cooker set on sauté setting; when oil is hot, add onion and garlic and saute for 2-3 minutes. Add thyme and white pepper and sauté an additional minute. Stir in broth and potatoes and secure cooker with lid.

Choose high pressure and set cooker for 3 minutes. Use natural release for 5 minutes, then use quick release.

Place cream cheese into a food processor bowl, then add some hot broth and potato mixture and process until smooth; add cream cheese mixture back into soup in cooker, then grate cheddar and stir in, along with chopped ham. Serve soup with thick slices of your favorite bread.

Stove Top Method:
Place oil into a large Dutch oven or pot over medium heat; add onion and garlic and saute until onion is softened and translucent, approx 6-8 minutes.  Add thyme and white and saute an additional minute; stir in broth and potatoes.

Bring soup to a simmer and cook until potatoes are tender, 20-25 minutes, stirring often to keep bottom from scorching.

Place cream cheese into a food processor bowl, then add some hot broth and potato mixture and process until smooth; add cream cheese mixture back into soup, then grate cheddar and stir in, along with chopped ham.  Serve soup with thick slices of your favorite bread.
